Not Yo Mama's Mush



     When was the last time you ate fried porridge? For me it was Monday morning. 

     Before that it was 1965. 

     My Mama always called our bowls of cooked cereal mush. After feeding six hungry little snappers for breakfast, she often spooned the leftovers into a loaf pan. The next morning, after it had congealed in the refrigerator overnight, she sliced it, fried it and served it with maple syrup.

     I made mine with rolled oats, ground flaxseed, chopped pecans, salt, brown sugar and milk. My fried patties were too fine to call mush so a christened them porridge cutlets.

  2. LOVE!!! I grew up on mush for breakfast. Porridge was something the three bears ate;-)

  3. I never had mush for breakfast, only boring oatmeal. I still adore it and my husband makes the best by slowly cooking steel cut oats in butter till it is golden and then tending the oatmeal carefully for 1/2 hour. I don't have the patience for that so I pretend that his is so much better.

  4. I've never thought of this, but it sounds brilliant! I'm always desperate for new easy-fixes for the little ones and never know what to do with the leftover bits of porridge in the pot. Perfect!

  5. Porridge cutlets! The name alone makes me want to make some mush so I can make some cutlets. I could call them mush pies, if they turn out more like that - but porridge feels more charming.
